Kale Salad with Spicy Peanut Dressing

by Marissa on August 23, 2012

Impromptu date nights are the best.

Yesterday David and I wanted to enjoy the beautiful Summer evening here in NYC so we headed up to Eataly’s Birreria for a glass of rosé.

Two glasses of wine later we found ourselves at Hillstone — one of our favorite “after-work” places to have dinner. We’re big fans of most of their menu, including the Veggie Burger and the sushi. Their sides are also so yum and last night I spied a new addition: kale salad!

If there’s one thing David and I can always agree on, it’s kale salad.

I’ve posted a lot of kale salad recipes on this blog and in the process turned him into a kale salad lover — possibly one of my most proud accomplishments.

We practically inhaled Hillstone’s kale salad, but tonight for dinner we were still craving it.

I took matters into my own hands and decided I would try to recreate it. Theirs had cabbage and cilantro which I didn’t have so I left it out but everything else was spot on.

Kale Salad with Spicy Peanut Dressing

1/2 head of kale, chopped into bite-size pieces
2 Tbsps mint, finely chopped
2 Tbsps peanuts, roughly chopped
1-2 scallions (green parts only), thinly sliced
1 Tbsp all-natural, organic peanut butter
2 Tbps tamari
2 Tbsps mirin
juice of 1 lime
dash of cayenne

Add the kale, mint, peanuts and scallions to a salad bowl. Massage the mixture a bit with your hands just to soften the kale. In a blender or food processor combine the peanut butter, tamari, mirin, lime juice and cayenne.  Pour the dressing over the salad and combine so all of the greens are saturated. Refrigerate and allow it to marinate in the dressing for up to 30 minutes before serving.

I’m pretty sure this one will make an appearance in the Fall Total Reset Plan.

The morning rain has stopped and it’s a slightly cooler summer day in NYC today, perfect for this this recipe. If you’ve been following this blog for awhile, you know I eat a mostly plant-based diet and I’ve never featured anything but plant-based recipes here. But when I came home to David making chicken soup [...]

Meet Adriana. Before the Total Reset Plan she was a healthy eater who was stuck in a rut of her same-old, go-to meals. During and after she felt satisfied, energized and motivated in a way she never had before with food. Even her husband, Carl, was on board with the exciting meals she was cooking [...]

Whether you’re a kid or an adult, a snack is always better when it’s fun. And as far as snacking goes, I don’t think it gets any better than these apple snackers inspired by Whole Foods. They’re crunchy, creamy, chocolate-y, sweet and savory all in one bite and they look cute too! Core your apple [...]

One of the things I love most about cooking is not just creating recipes, but assembling recipes! The chia seed parfait I created this morning was less about cooking and more about putting the pieces together like a puzzle. I just used what I had in my kitchen to create this breakfast treat. And if [...]

“For most people, the only real stumbling block is fear of failure. In cooking, you’ve got to have a what-the-hell attitude” – Julia Child I’m a self-proclaimed bookworm and David likes to joke that I always  have my nose stuck in a book. My favorite books are usually the ones that have been recommended to [...]

I know what you’re thinking. Fries? On this blog? These aren’t just any fries. They’re acorn squash fries and you may want to hurry and try them before squash is out of season at the end of the month. I knew that I wanted to make some comfort food with this squash and create fries [...]

Plus, you’ll be doing a jig when you see that these only take 2 minutes to make. Shishito peppers have been popping [...]

As an entrepreneur, a blogger and someone who just likes pretty pictures and organizing my thoughts, Pinterest is genius to me. When I see a cute pair of wedges in a fashion magazine or a recipe I want to try, I love to tear the pages out. Yes, I’m that girl on an airplane who [...]
