Spring Skiing In Whistler and What I Ate

by Marissa on April 11, 2012

I love to ski but have never liked being cold so if I had to choose a time to do it, now is the best time of year.

Both of us in need of a vacation, David and I planned a long one that would start with skiing and end at the beach (we couldn’t skip the beach). We headed to Vancouver for Easter weekend and spent a day there before making the trip up to Whistler.

With the time change in our favor, we were awake at dawn (literally) and hopped on the bikes provided by our hotel to tour Stanley Park.

I’m totally in love with West Coast living.

I found the local organic raw, vegan cafe and juice bar, Gorilla Food, in downtown Vancouver and then we were off to the mountains.

Once in Whistler, we were greeted with sunshine, warm temps and more picture-perfect views.

A day that starts with skiing and ends poolside is ideal in my book.

Whistler Vilage

Apres ski, Whistler Village

Used to the typical ski resort grub of pizza, french fries and burgers, I was amazed by the healthy vegan (yes, vegan!), vegetarian and gluten-free options offered at every restaurant on the mountain.

Carrot spaghetti at Christine's, Blackcomb Mtn.

Raw microgreens salad, Christine's, Blackcomb Mtn.

Falafel Wrap + Cabbage Salad, Roundhouse, Whistler Mtn.

Berry Green Smoothie, Four Seasons Resort, Whistler

Needless to say, I was in Health Coach heaven.

After three days skiing, we’ll make our way back stateside via Vancouver then on to Florida for some sun and sand.

Where is your favorite place to ski?

Have you ever been surprised by healthy fare in a place where you thought you wouldn’t find it?

Turnips Two Ways

Wait, before you “turn up” your nose …reconsider the turnip. I can probably count on one hand the number of times I’ve eaten turnips. They’re so often overlooked, because most people don’t know how to cook these ruddy little root vegetables which are high in Vitamin C. Then I had braised turnips at Locanda in [...]

When I was 13 I read the book Meat is Murder and refused to dissect a frog in my eighth grade science class (it caused quite the stir, I will say). Ever since then, I have eaten some kind of vegetarian, vegan or pescatarian diet. More than 20 years later, I haven’t missed an ounce [...]

A Souper Weekend

I spent the majority of last week on a business trip in London tempered by a brief, but much-needed visit with my bestie, Kathryn, who is living there for a stint working for the 2012 Olympics. When I returned home on Friday, jet lag in tow, I was in need of  a restful weekend, ready [...]

I hope by now that it’s obvious that I’m concerned about what I put into my body. But this time of year I take my concern one step further to the Halloween treats I hand out to the kids. But that doesn’t mean I can’t still participate in the festivities. Every year, I post a [...]

Last night I was walking home with my friend Robyn when I proclaimed that I had nothing to eat in my house – not even a can of beans. It was true, mostly. I had been out of town for four days and was to leave today again for another long-weekend trip. Hence, no food. [...]

Easy Pesto Cubes

For weeks it seems I’ve had herbs coming out my ears! Every time I pick up my CSA share, there are more herbs than I can realistically use in a week — basil, mint, parsley and cilantro. One of my biggest pet peeves is when food goes to waste in my fridge and one of [...]
