Oz-approved Chia Pancakes

Once upon a time, I posted this on Twitter:

A few Fridays ago I got a call from the Dr. Oz Show, one thing led to another and this dream came true! I’m a firm believer in being clear and direct about your intentions. With purpose and passion behind them, your dreams do come true.

I was so overwhelmed by all your support and everyone who tuned in to watch my five seconds of fame. In case you blinked missed it, here it is again in short and long version.

So about that pancake recipe I’ve been promising you. Here it is in all it’s glory! After the protein pancakes and now these, I’m done and done with pancakes for awhile.

Oz-approved Chia Pancakes

Makes 12 servings

1 cup gluten-free oats
1/4 cup almond meal
1/4 cup ground chia
1/4 cup shredded unsweetened coconut
1 1/2 bananas, mashed
2 eggs (or use 2 tbsp ground chia mixed with 6 tbsp water)
1 tsp baking powder
1 pinch of sea salt
1 tbsp coconut oil
1 1/4 cup almond milk
2 dashes cinnamon
1 tsp vanilla extract

For topping 

Toasted pecans
Sliced banana
Whole chia seeds
Ground cinnamon
maple syrup


Add all ingredients to a blender, except bananas. Blend until smooth, then add bananas and blend again. Heat a skillet and grease with coconut oil.

Pour batter onto the skillet in uniform circles and wait for them to bubble.

Flip and cook until golden brown on both sides.

Top with toasted pecans, sliced bananas, cinnamon, chia seeds and pure maple syrup.
