Gluten-free Sugar-free Banana Chocolate Chip Bread

Ingredients
  • 1/3c. coconut oilmelted
  • 1/4c. tahini
  • 2 eggs
  • 2-3 ripe bananasmashed
  • 1/4c. non-dairy milk
  • 1tsp. baking soda
  • 1tsp. vanilla extract
  • 1/2tsp. sea salt
  • 1/2tsp. cinnamon
  • 1 3/4c. cassava flour
  • 1/4c. dark chocolate chipsoptional
Instructions
  1. Preheat oven to 350 degrees.
  2. Coat a 9×5-inch loaf pan with oil or line it with parchment paper.
  3. In a large bowl, whisk coconut oil and tahini until blended
  4. Whisk in all other ingredients except flour and chocolate chops one at a time until combined. I like to leave chunks of banana.
  5. Fold in flour and stir with a spoon or spatula until combined.
  6. Add in chocolate chips if using.
  7. Pour the batter into the pan and bake for 60 minutes or until a toothpick comes out clean.
